Happy, Healthy Kitchen – Red Pepper Dipping Sauce

If you are anything like me, when I am trying to stick to a healthy meal plan for weight loss, I eat a lot of fresh vegetables. A lot. I eat them in salads, smoothies, soups, stews, stirfry and frankly, anywhere else I can add them. Vegetables add bulk to your meals with very few calories, leaving you feeling fuller longer. For snacking, I like to keep washed, cut up vegetables ready in my fridge. It seems I enjoy eating them ten times more if I have a yummy sauce to dip them in. Anyone, agree? And, I like to change the dipping sauce up for variety, so I don’t get bored. I created this dipping sauce one day, and it was a family favorite. I think it would be a really good sauce on steamed veggies as well. I wanted to share it with all of you and hope you enjoy it.

Red Pepper Dipping Sauce

1 can drained white beans
1 large red pepper, cut up, seeds and stem removed
1/4 cup hemp seeds
1 date, or 1 tsp. liquid sweetener of choice like agave or maple syrup
1/2 teaspoon apple cider vinegar
1-2 cloves of garlic
1/2 teaspoon of paprika
1 teaspoon of cumin
1 heaping teaspoon of Trader Joe’s harissa sauce, or your favorite hot sauce
Salt, to taste.
Directions: Place all ingredients in high speed blender and blend until smooth. Refrigerate. If necessary, stir in a teaspoon of water at a time, to thin out to desired consistency.
