Happy, Healthy Kitchen – Quick Veggie Quinoa Salad
Quinoa. As a super seed that is a complete protein and fantastic wheat-free alternative, the demand for quinoa has risen sharply in recent years. We can understand why it is being seen by many as a super food. Quinoa is gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. It is rich in magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. Given its high beneficial nutrient content, it makes sense that quinoa could improve metabolic health. It is higher in fiber than most grains and has a low glycemic index, which is good for blood sugar control. For those of us wanting to lose weight, quinoa is not only a healthy alternative, but can help with feeling full longer and significantly reducing appetite. And that is a win win.
Sometimes you don’t feel like your regular everyday green salad, am I right? We think this quinoa salad recipe is a perfect choice whether you serve it cold (because you made a big batch of quinoa for your meal prep) or toss and eat it warm on a bed of greens like arugula. With fall around the corner, eating this as a warm salad will be comforting and filling for sure. The following recipe is for one serving but feel free to double or triple the recipe for leftovers. This salad would go well with any of your favorite cutup veggies. And did we mention it is quick?
Quick Veggie Quinoa Salad
1 cup cooked quinoa
1/3 cup black beans, or any bean of choice, drained and rinsed
1 green onion, sliced very thin
1/2 small Persian cucumber, diced small
1 small tomato, diced small, or a handful of cherry tomatoes
1 1/2 teaspoon lemon juice, or any vinegar on hand
2 teaspoons olive oil, or avocado oil
Pinch of salt and pepper
Toss all ingredients in a medium bowl. Pick an additional garnish of chopped cilantro, lime wedges, crumbled feta or avocado cubes if you wish. Enjoy!
