Happy, Healthy Kitchen – Quick Salsa (Covid -19 Pantry Edition)
If you are anything like me, you postpone going to the store and don’t shop as often as you used to. I end up looking in my pantry to see if I have the ingredients to throw a recipe together or at least, one I can easily make substitutions for. I ran across this quick salsa recipe and wanted to share it with you in hopes you might have the ingredients or substitutions on hand. Note, I added in parenthesis some of my substitution ideas.
2 cans diced tomatoes (whole)
1 – 2 jalapeno peppers (jarred or serrano chilis)
1 whole clove fresh garlic (jarred or 1/2 tsp. garlic powder)
One small handful cilantro (1 tsp. coriander)
1/2 tsp. cumin
One lime juiced (one lemon or one capful apple cider vinegar)
1/2 tsp. agave nectar (maple syrup or sugar)
1/2 tsp. salt, or more to taste
Empty ingredients into a blender or food processor. Rough chop a few seconds until desired chunky consistency. Place contents in bowl. Feel free to stir in some fresh, finely chopped ingredients you have on hand if you like a chunkier salsa, i.e. fresh tomatoes, white or green onions. Serve and enjoy!
