Happy, Healthy Kitchen – One Pot Pasta

Sick of cooking yet? It can be a little challenging to have prepare¬†all the meals now that we are staying at home. I don’t know about you, but sometimes I don’t feel like cooking, but we still need to eat. I like this quick, easy one pot pasta recipe I found. It is as simple as opening cans from your pantry, bringing it to a boil, cook til pasta is tender and dinner is ready.It can be prepped in five minutes and takes twenty minutes all together. Not to mention, pasta is a comfort food for many of us. That is a win win in my book. Enjoy!

One Pot Pasta
Ingredients
1 16-ounce jar salsa
1 15-ounce can black beans, drained
1 11-ounce can corn, drained
1 14.5-ounce can beef or veggie broth
2 cups water
12 ounces pasta
2 cups shredded cheddar cheese
3/4 cup fresh chopped cilantro (optional)

Directions

Place salsa, black beans, corn, broth, water, pasta, and 1/2 cup of cheese in a large pot. Bring to a boil, the turn heat to medium and cook, stirring several times, for 10-12 minutes or until pasta is tender. Remove from heat, stir in remaining cheddar and cilantro, if desired. Serve and enjoy!
