Happy, Healthy Kitchen – Pressure Cooking
I have to say I love my kitchen gadgets. One of my favorite places to browse is the kitchen housewares section of any store. When my slow cooker broke a couple of years ago, I definitely missed it. I would try to remember to make dinner in my slow cooker in the morning, so it could cook all day. When I was looking to replace it, I found a pressure cooker, slow cooker, rice maker, yogurt maker all in one combination. I have since fallen in love with pressure cooking and have never once looked back at the slow cooking option.
I love how quickly I can come home from work, and throw in all the ingredients for a soup, stew or chili. I set the timer for 8 to 10 minutes (depending on the recipe), change into my comfy clothes, straighten up the house and dinner was ready. Even with the extra few minutes it took for it to come up to pressure, I loved the idea of setting it and walking away from the kitchen. I could do other things and come back to dinner completed in a short amount of time.
One of my favorite things that I make in my pressure cooker every week is beans. I love how incredibly creamy dried beans come out. If you have ever cooked them on the stove, you know they can take hours to achieve the same creamy consistency. Not only do dried beans taste ten times better and fresher than canned, they are way more economical. I also like the fact that I can control the sodium content.
There are a lot more things on my list that I want to try in my pressure cooker. Like steaming my sweet potatoes for ten minutes instead of baking them in the oven for an hour. Or mashed potatoes where you put the cut up potatoes in water in the pressure cooker for eight minutes, drain, and mash in the stainless steel pot. Easy peasy. I have already tried the sauté option for the onion and garlic first, then added the remaining ingredients and continued cooking my soup, stew or chili all in the same pot.
Honestly, I think any busy person would love how much time you can save with pressure cooking. Who doesn’t need more time? Not to mention, you can save money by making nutritious, fast meals from home that will help you stick to your health and weight loss goals. That’s a win win.
