Happy, Healthy Kitchen – Warm Pasta Salad

Comfort food can be delicious, satisfying and good for you all at the same time. This pasta salad recipe is light, healthy, easy to make, loaded with nutrients and a crowd pleaser. It is a great meal prep or make ahead of time dish.

Ingredients
1 1/2 cups corn
1 large red bell pepper, diced small (roasted red pepper would work too)
1 cup cherry tomatoes, cut in fours
1 cup celery, diced small
¼ cup chopped fresh cilantro
3 green onions, thinly sliced
1 jalapeño, minced
8 oz. package of rotini pasta

Creamy Dressing
1 cup raw cashew pieces, soaked, drained and rinsed
2 Tbsp. nutritional yeast
1 – 2 garlic cloves
2 Tbsp. lime juice
½ cup water
½ tsp smoked paprika
1 tsp salt

Directions:
Chop and prepare all vegetables, set aside. Place all dressing ingredients in a blender until smooth. Prepare pasta according to package directions. If serving salad warm, combine drained pasta with veggies and dressing and serve.
