Happy, Healthy Kitchen – Veggie Dipping Sauce…

If you are anything like me, when I am trying to stick to a healthy meal plan for weight loss, I want to fill up on veggies. Salads, smoothies, soups, stews, stir fry and frankly, anywhere else I can add them. Vegetables add bulk to your meals with very few calories, leaving you feeling fuller longer. I like to have them cut up and ready for snacking. Is it just me or do you love a sauce to dip them in. Anyone, agree? I love this sauce and think it might be really good on steamed veggies as well.

Ingredients
1 can drained white beans
1 large red pepper, cut up, seeds and stem removed
1/4 cup hemp seeds
1 tsp. liquid sweetener of choice like agave or maple syrup
1/2 teaspoon apple cider vinegar
1 or 2 cloves of garlic
1/2 teaspoon of paprika
1 teaspoon of cumin
1 heaping teaspoon of Trader Joe’s harissa sauce, or your favorite hot sauce
Salt to taste.

Directions: Place all ingredients in a high speed blender and blend until smooth. Refrigerate. If necessary, stir in a teaspoon of water at a time, to thin out to desired consistency.
