Happy, Healthy Kitchen – Peanut Butter Oat Bars
I have a sweet tooth and like to make homemade treats. I looked through my recipes trying to make something quick with ingredients I have on hand. Although not a cookie, I think these no-bake, chocolate chip peanut butter oat balls are pretty yummy and will hit the spot. Not to mention, they are healthy and can be enjoyed guilt free in moderation. No need to bake makes them ready right now.
1 cup of uncooked rolled oats
1/2 cup mini chocolate chips (optional)
1/2 cup peanut butter (or other nut/seed butter)
1/3 cup melted coconut oil
1/3 cup maple syrup (or agave)
1/2 cup shredded unsweetened coconut
1 teaspoon vanilla extract
pinch of sea salt
Add all ingredients in a bowl and mix well until combined. Either press mixture into a baking pan to make bars or roll a heaping tablespoon of batter into a ball. If you want, top bars or roll the ball in extra coconut flakes or cocoa powder. Store in the fridge or freezer.
