Happy, Healthy Kitchen – Oil Free, Easy and Delicious White Bean Dip
As we lose weight, we usually aim to add more vegetables into our daily eating plan, right? I know, for me, it always helps to have an arsenal of go to healthy dips, dressings and sauces. Not only are my taste buds happy, but it really helps me to enjoy eating more raw and cooked vegetables. And if I enjoy it, then vegetables will become a regular part of my healthy eating habits. Last week in my Healthy Happy Hour blog post, I mentioned I would share with you my new recipe for an Oil Free, Easy and Delicious White Bean Dip. It tasted even better the next day as it was chilled and the flavors had time to meld. Next time I plan on thinning it out a bit and using it as a sauce for my steamed veggies. I think this can be a super versatile dip as well. You can make it a completely different dip by simply changing the spice. I can picture this as a creamy chipotle dip by adding some paprika and chipotle seasoning. Or how about a creamy cilantro dip by adding fresh cilantro? The possibilities are endless. One 15 oz can white beans, drained
1 1/2 tablespoons lemon juice
2 tablespoons rice wine vinegar
1 1/2 tablespoons tahini
1/2 teaspoon dijon mustard
1 clove garlic
1 1/2 teaspoons dried thyme
salt to taste
2 tablespoons of water, or more for desired consistency
Blend all of the ingredients in a blender, or food processor until smooth. Slowly add more water, if needed, for desired consistency. (I used my Nutri Bullet). Chill in fridge and enjoy.
