Happy, Healthy Kitchen – Non Dairy Cheese Sauce

For a couple years now, I have been enjoying the health benefits of eating dairy free. I used to love cheese so one of the hardest things to give up was cheese sauce. There are a lot of different dairy free cheese sauce recipes on the internet. I wanted to combine some of them to make a tasty substitute. I love using it on steamed broccoli and cauliflower, potatoes, pasta, nachos and tacos. The recipe is versatile enough if you want to add some fresh or jarred jalapeno to kick it up a notch. Sometimes I like to stir in some salsa for a nacho cheese sauce, depending on how I am using it. Oh, and did I mention it is super simple.

1/4 cup white onion
1 cup carrots, cut in big chunks
2 cups potatoes, cut in big chunks
2/3 cup cashews
1 tsp salt (or more to taste)
2 tsp garlic powder
2 tsp onion powder
1 tsp paprika
1/4 cup nutritional yeast
Juice of 1/2 of lemon

Add onion, carrots and potatoes to a saucepan full of water. Bring water to a boil and cook vegetables until soft. Before you drain out all of the water. Reserve 2 1/2 cups of hot vegetable water and set aside. Spoon cooked vegetables plus the remaining ingredients in a high speed blender. Add one cup of vegetable water. Blend ingredients well until smooth and creamy. Add small amounts of water to the blender, if needed, if the sauce is too thick. Taste and adjust any seasonings. Serve and enjoy!
