I’m noticing that people are handling stress in different ways. One common topic among my friends this week is eating dessert. Either some are going crazy stress baking in the kitchen, while others are afraid to even start down that road. I am somewhere in the middle. Cookies have been on my mind ever since one of my friends showed us her fresh batch of chocolate chips cookies during our Zoom Happy Hour this week. I tried a new cookie recipe but didn’t feel it was good enough to share. So, I looked through my recipes trying to find a quick and easy treat, made with common pantry ingredients. Although not a cookie, I think these no bake, peanut butter oat balls are pretty yummy and will hit the spot. Not to mention, they are pretty healthy and can be enjoyed guilt free in moderation.
1 cup of uncooked rolled oats
1/2 cup peanut butter (or other nut butter)
1/3 cup melted coconut oil
1/3 cup maple syrup (or agave)
1/2 cup shredded unsweetened coconut
1 teaspoon vanilla extract
pinch of sea salt
Add all ingredients in a bowl and mix until combined. With clean hands pickup about a heaping tablespoon of batter and roll into a ball. If you want, roll ball in extra coconut or cacao powder. Store in fridge or freezer.
