Happy, Healthy Kitchen – Mexican Potato Soup

It’s colder days and cozy weather which means it’s soup time! I love soup this time of year, can anyone relate? I love how comforting it is. The tomato based broth for this soup is so good. It is delicious as a vegan/vegetarian meal or feel free to add your favorite meat or sausage.

8 small-medium gold potatoes, cubed
1 large white onion, diced
2 shallots, diced small
7 large garlic cloves, minced (adjust to your liking)
3 carrots, diced
1 red & 1 yellow pepper, diced
1 can fire roasted tomatoes with chilis
1 cup frozen corn
1 cup salsa of your choice
4 cups veggie broth
2 tsp. cumin
1 tsp. smoked paprika
1 tsp. onion powder
Salt and pepper to taste
Hot sauce or red chili peppers
1/4 c. cilantro, diced small

Sauté onion, garlic and shallots until translucent. Add in peppers and carrots and sauté for a few more minutes. Add tomatoes, corn, salsa, broth, and spices to the pot except cilantro. Simmer for 30 minutes or until potatoes and carrots are tender. Add in cilantro. Garnish with avocado or cheese. Enjoy!!
