If you love coconut as much as I do, I think you’ll find these to be scrumptious. I love to have them on hand; a favorite way to enjoy them is with a cup of hot herbal tea or coffee. It feels good knowing that you can eat a couple of these decadent treats without any guilt.
Yield: About 10 to 12 balls depending on size preference
2/3 cup raw almonds
2 1/4 cups unsweetened coconut flakes
2 tablespoons maple syrup
1 – 2 tablespoons coconut oil (optional)
1 1/2 teaspoons vanilla extract
1/2 teaspoon sea salt
Place the raw almonds in the food processor and process until they are finely ground. Remove the almond mixture from the container and set aside in a bowl. Add the coconut flakes to the container and process to make a powder-like consistency. Return the almonds back into the container and pulse to combine. Next, add the maple syrup, coconut oil, vanilla extract and sea salt, and process again to blend well. The mixture should be sticky and moist. Feel free to add a few drops of water at a time and process again, repeating until you reach the desired consistency. With clean hands, roll the mixture into balls to whatever size you wish. Cover and refrigerate. They are even better after some time in the fridge as they will harden. Note: After you process the ingredients as directed, they are ready to enjoy if you like. There is no need to wait extra time for them to be finished. If you are really rushed and don’t want to mess with taking the time to roll them into balls, transfer the finished product into a glass container with a snap on lid. Then, with slightly wet fingers, press the mixture firmly into the glass container and cut them into small square pieces. Another bonus is that these freeze really well.
