Happy, Healthy Kitchen – Homemade Freezer Chocolate
A couple of years ago I was on a very strict, 21 day elimination diet. I followed a book from an OB/GYN aiming to naturally balance my hormones. It required me to go completely sugar free. The only sweetener I could have was stevia. As I have mentioned before, I have a major sweet tooth. I quickly realized that almost all store bought chocolate has added sugar. I got the idea because a friend would indulge on chocolate made with stevia, but it was quite expensive. So I ventured to try to make my own healthy version. Starting out, I came up with a few versions as I was learning. I finally settled on this super simple 5 ingredient recipe. One of the best parts was the only dirty dishes I had was my glass measuring cup and small whisk. Happily, I could have one small piece in the afternoon and it would completely satisfy my craving. Sometimes I would get fancy and add almond butter in the middle to make almond butter cups. I hope you enjoy this chocolate as much as I do. (BTW, the reason for the name…the coconut oil starts to melt when taken out of the freezer).
2/3 cup coconut oil
8 tablespoons cacao powder (different from cocoa powder)
4 dropperful of liquid stevia (my favorite was caramel flavored)
1/2 teaspoon vanilla extract
pinch of sea salt
Place coconut oil in a glass measuring cup. Carefully melt in the microwave oven a few seconds at a time, stirring until liquid. Hand whisk in the remaining ingredients until smooth and creamy. Pour into silicone chocolate molds. Carefully place in the freezer. Ready to eat in as little as 20 minutes. Enjoy!
