Happy, Healthy Kitchen – Hearty Chili

I’ve made this recipe for friends who raved about it and went back for seconds (and thirds). I love that it tastes full of flavor the day you make it. When I made it for my friends, I used organic ground turkey but I usually made it with soy chorizo from Trader Joe’s. In my opinion, they are both great. It is an easy, fast way to get a cozy, hot meal on the table for your family. And it fits well into most weight loss programs. Win win.

Ingredients:
2 T. olive oil
One large white onion, diced
One large red bell pepper, diced small
16 oz. organic ground turkey
4 cloves garlic, minced (I used approx 2 t. garlic paste)
One 15.5 oz can kidney beans, liquid drained off top
One 15.5 oz can black beans, liquid drained off top
One 15.5 oz can pinto beans, liquid drained off top
Two 14.5 oz cans fire roasted tomatoes
One 4 oz can fire roasted green chilis
1 T. paprika
1 T. cumin
2 T. taco seasoning (and/or chili powder)
1 tsp of garlic powder, onion powder and salt
1/4 tsp cayenne pepper (or more to taste)
1 1/2 tsp agave (or honey)
1 1/2 tsp apple cider vinegar

Directions:
Saute onions and red pepper in olive oil until onion is completely translucent. Add ground turkey, and cook well. Add in garlic and cook for 2 min. Add the rest of the ingredients. Bring to a boil and simmer on low, stirring occasionally. Ready to serve as soon as it’s hot. Garnish with sour cream and shredded cheese.
