Happy, Healthy Kitchen – Healthy Homemade Pancakes

The weekends usually give us time to enjoy a home cooked breakfast. It can feel good to linger in our bathrobe with our coffee. Who doesn’t love pancakes? And if they are also healthy, light and easy to digest too? These are gluten free, plant based and kid approved. I love that they are made from ingredients I seem to always have on hand when the craving hits. Hope you can enjoy your mornings with these.

Ingredients:
1 1/2 cups of oats, quick or rolled
1 overripe banana, mashed
1 cup plant milk (almond or coconut)
1 T. maple syrup (or agave)
1 t. vanilla extract
Sprinkle of cinnamon
Pinch of salt
1 cup of berries, thawed

Directions:
Place oats in a blender. Blend into fine flour. Add the rest of the ingredients except the berries and blend to combine. If needed, add more plant milk a little at a time until a pancake batter consistency is achieved. Lastly, throw in your berries of choice and turn on for 2 seconds to incorporate into batter or fold in by hand. Pour about 1/2 cup on a griddle and cook.

Chef’s Note: The banana acts as an egg substitute.
