Happy, Healthy Kitchen – Easy Chicken Marinara Sauce
Last week I was craving some good marinara sauce and pasta. To be honest, I usually open a jar of Trader Joe’s sauce and dress it up by adding my own extra touches like diced tomatoes, onion, garlic, etc. I looked in the pantry and didn’t have any jarred marinara or spaghetti sauce. So that is how this quick and tasty sauce was created. I basically threw what I had together, including some extra red wine I had on the counter and the rest of a jar of salsa for added kick. I think I was inspired by one of my favorite YouTube cooking channels; occasionally she will look in her fridge, and effortlessly throw a recipe together. I must say I think it came out pretty fantastic! Typically I think of ground turkey meat in marinara sauce if I add meat, but had a large chicken breast and thought I would give it a go. Courageously I served it over pasta for my friends that night. They gobbled it up and had seconds. The next night, I ran and got more pasta at the store to serve to more friends. It was even better the second night. Topping it with the Trader Joe’s blend of fresh parmesian, romano and asiago cheese kicked it up a notch for sure. I was motivated to share it with all of you because of all the positive reactions to it. I hope you like it as well. Here goes…
Easy Chicken Marinara Sauce 
1 T olive oil
1 medium onion diced
3 tsp diced garlic, or fresh cloves
2- 14 oz. cans diced tomatoes
1 6 oz can tomato paste
1 10 oz can Campbell’s tomato soup
1/2 c Trader Joe’s pepita salsa or any other brand salsa
1/2 c red wine, any kind
1 T agave syrup
1 tsp thyme, dry

1 tsp basil, dry
1 T italian seasoning, dry
1 large cooked chicken breast diced small pieces
Saute onion and garlic in olive oil until cooked. Add rest of ingredients and simmer for 15 min. Serve on pasta or zucchini noodles. Top with fresh parmesan or cheese of choice.
