Happy, Healthy Kitchen – Dijon Dressing

I don’t know about you but I am always searching for healthy, creamy dressing and sauce recipes for my vegetables. Whether I put them on my salads, bowls or steamed veggies, I like to sauce it up. #saucy Store bought sauces and dressings are often filled with preservatives, oils and are high in calories and sodium. Or the fat free ones are not very satisfying. It is challenging to find a happy medium. This recipe can be thicker like a sauce if you add less water. I added the zucchini to bulk it up, adding more servings without adding too many calories. It’s a very forgiving recipe and you can easily have substitutions.

Ingredients:
One medium zucchini, peeled and chopped
1 or 2 garlic cloves
1 1/2 medjool dates, pit removed
1/2 large lemon, juiced
1/2 capful apple cider vinegar
1 tablespoon spicy dijon mustard
1/4 cup hemp seeds
1 tablespoon tahini (or other nut butter)
Pinch salt and pepper, to taste
1/4 cup water (more or less depending on your desired consistency)
Add a few drops of hot sauce if you want to add more spice

Directions:
Place all the ingredients in a blender and blend until smooth. Thickens slightly in the fridge. Enjoy!
