Happy, Healthy Kitchen – Creamy Lemon Garlic Alfredo Sauce

The other night I was craving a healthy alfredo sauce over my chickpea pasta. Is there such a thing? This quick sauce was ready before the pasta was done cooking. I thought it was satisfying for having a base of cauliflower and being low in fat. It is also good for most eating plans like keto, whole30, vegan, gluten free, dairy free and soy free. If you wish to make it nut free, you could substitute the cashews for either hemp seeds, tahini or soaked sunflower seeds. You can also add chicken or shrimp to this as well.

Ingredients:
Zest and juice of one medium lemon
One frozen 16 oz. package cauliflower
1/2 cup water
1/4 cup raw cashews
1/4 cup nutritional yeast
2 small cloves garlic, peeled
1/2 tsp garlic powder
1/2 tsp maple syrup
1/2 tsp or more salt
Fresh ground black pepper
Red pepper flakes, if desired

Directions:
Run hot water over cauliflower in colander to thaw a little. Place all ingredients in a high speed blender until smooth and creamy consistency. Enjoy with your favorite pasta or zoodles. Side note: The next day I mixed it with spaghetti sauce to make a creamy marinara. Double yum.
