I watched a video on Youtube with mashed potatoes. You guessed it, it made me crave mashed potatoes. Usually weight loss and mashed potatoes don’t go hand in hand. But I have learned a trick on how to make creamy, decadent mashed potatoes with no fat, dairy, butter, cream, or sour cream added. Sounds impossible, right? I know, I thought so too. Until I tried it. I think one of the secrets is in the potato. Yup. Organic Yukon gold potatoes to be exact. These potatoes are full of flavor, satisfying and delicious. Another trick I learned is to set aside some of the starchy hot potato cooking water when I am draining them. Something else I love about these mashed potatoes is they are easy, fast to make, and I’m left with only one dirty pot to clean. I’ve made this by steaming my potatoes, but boiling them works also. To top it off, if you don’t count spices, it is a one ingredient recipe! The other day, my filling, comfort food bowl was only 200 calories or so. This recipe is super versatile so feel free to add a small amount of vegan butter, vegan mayo or plant milk if you want an even creamier dairy free alternative. They are seriously so good, I just stopped writing to steam my potatoes.

For the directions, boil or steam as many organic gold Yukon potatoes as you need. Leave the skins on. Cook potatoes until you can easily poke them with a fork. Set aside a cup or so of the starchy hot potato cooking water, depending on your serving size. I made a single serving by adding 4 steamed small potatoes in a bowl. Cut them into quarters. Smash them with my fork, adding hot water slowly until desired consistency. I seasoned mine with salt, pepper and everything but the bagel seasoning. Dill would be really yummy too.
