Happy, Healthy Kitchen – Chocolate
I am sure you’ve seen chocolate made with stevia on the market. I ventured to try to make my own healthy version. Starting out, I came up with a few versions as I was learning. I finally settled on this super simple 5 ingredient recipe. One of the best parts was the only dirty dishes I had was my glass measuring cup and small whisk. One small piece may satisfy your cravings. Sometimes I would add almond butter in the middle to make almond butter cups. I hope you enjoy this chocolate as much as I do.
2/3 cup coconut oil
8 tablespoons cacao powder (different from cocoa powder)
4 dropperful of liquid stevia (my favorite was caramel flavored)
1/2 teaspoon vanilla extract
pinch of sea salt
Place coconut oil in a glass measuring cup. Carefully melt in the microwave oven a few seconds at a time, stirring until liquid. Hand whisk in the remaining ingredients until smooth and creamy. Pour into silicone chocolate molds. Carefully place in the freezer. Ready to eat in as little as 20 minutes. Enjoy! Note: the chocolate will start to melt when you take it out of the freezer to eat it.
