Happy, Healthy Kitchen – Chicken Peanut Sauce Lettuce Wraps

With hotter weather I like quick and easy meals in order to spend less time in the kitchen. I used to love ordering the lettuce wraps from my favorite chain Chinese food restaurant and felt these would satisfy that craving. It is a delicious yet low calorie, low carb meal that fits into most weight loss plans. I bet the sauce would be amazing as a salad dressing on a Chinese chicken salad or as a chicken marinade too. If you want to try a meatless option, substitute chicken for a plant based chicken or crumbled tofu would work as well.

Ingredients:

3 1/2 tablespoons low-sodium soy sauce or tamari
1 tablespoon honey
1 tablespoon fresh grated ginger
2 1/2 teaspoon chili-garlic sauce (or choice of hot sauce)
3 tablespoons water
4 cooked (and shredded) boneless, skinless chicken thighs or breasts
1 head Bibb or Butter lettuce, separated into leaves
1 cup matchstick carrots
1 cup rough chopped cilantro
1/4 cup chopped roasted unsalted peanuts (or cashews)
Lime wedges

Directions:

Combine the soy sauce, honey, ginger, chili-garlic sauce and water in a bowl and whisk to combine. Combine chicken, carrots and cilantro in a bowl and coat with sauce.  Assemble wraps by spooning mixture in a lettuce leaf and top with chopped peanuts. Serve with lime wedges.
