Happy, Healthy Kitchen – Cheeze Sauce

More and more people are having to stay away from dairy. Are you one of them? Of course, it doesn’t taste like actual cheese sauce but a tasty substitute. I love using it on steamed broccoli and cauliflower, potatoes, pasta, nachos and tacos. The recipe is versatile enough if you want to add some fresh or jarred jalapeno to kick it up a notch or salsa for a nacho cheese sauce. It is super simple to make as well.

1/4 cup white onion
1 cup carrots, cut in big chunks
2 cups potatoes, cut in big chunks
2/3 cup cashews
1 tsp salt (or more to taste)
2 tsp garlic powder
2 tsp onion powder
1 tsp paprika
1/4 cup nutritional yeast
Juice of 1/2 of lemon

Add onion, carrots and potatoes to a saucepan full of water. Bring water to a boil and cook vegetables until soft. Before you drain out all of the water. Reserve 2 1/2 cups of hot vegetable water and set aside. Spoon cooked vegetables plus the remaining ingredients in a high speed blender. Add one cup of vegetable water. Blend ingredients well until smooth and creamy. Add small amounts of water to the blender, if needed, if the sauce is too thick. Taste and adjust any seasonings. Serve and enjoy!
