Happy, Healthy Kitchen – Breakfast or Tea Cookies

I don’t know about all of you, but I have a major sweet tooth; couple that with cozy autumn weather where I want to bake. In order for me to realistically stick to a weight loss program that lasts, I have to have healthy treats in my house. Period. Being able to indulge in small homemade treats helps me not to feel deprived. I have found when I start to feel deprived, is when I will grab other desserts that are not as good for me. There are a lot of store bought desserts that are not only filled with tons of processed sugars, but preservatives and chemicals too. If you take the time to make your own, think of it as healthy self care and a way to nourish your body too. All of us can consciously use the same food indulgences to either foster self destructive or self nurturing behaviors. It’s a choice. I love how simple and healthy the recipe is. I originally created these when I was on a raw food cleanse and wanted a raw cookie treat I could dehydrate. However, these can easily be baked as well. I love to eat these with a hot cup of herbal tea or cold glass of my favorite plant milk. Enjoy!

3 apples, (any kind is fine, I used organic and left the peel on)
1 really ripe banana, (like you would throw out or use for banana bread)
1/4 cup raisins
2 T. unsweetened fine shredded coconut (or more if you love coconut)
1/4 to 1/2 cup oats (uncooked, instant or regular is fine)
2 T. freshly ground flaxseed
1 T. cinnamon (more or less depending on your taste)
1 1/2 t. vanilla extract
Pinch of salt

Start out with 2 of your apples and the banana in a high speed blender or food processor. Blend until creamy, like a sweetened applesauce. Place in a bowl. Finely dice the remaining apple and add to the mixture. Add the rest of your ingredients and stir. Set recipe aside for 15 minutes to allow the flax seed to fully absorb and thicken. Feel free to adjust consistency by adding more oats or plant milk. Preheat the oven to 350 degrees and bake for 8 – 10 minutes.
