Happy, Healthy Kitchen – Asian Peanut Chicken Lettuce Wraps
I was craving a delicious yet low calorie meal that would still fit into my weight loss plan. These wraps serve four and are only 230 calories per serving. I used to love ordering the lettuce wraps from my favorite chain Chinese food restaurant and felt these would satisfy that craving. Not to mention it is quick and easy. By the way, this sauce would be amazing as a salad dressing on a Chinese chicken salad or marinade too.
Asian Peanut Chicken Lettuce Wraps
3 1/2 tablespoons low-sodium soy sauce or tamari
1 tablespoon honey
1 tablespoon fresh grated ginger
2 1/2 teaspoon Asian chile-garlic sauce
3 tablespoons water
4 cooked (and shredded) boneless, skinless chicken thighs or breasts
1 head Bibb or Butter lettuce, separated into leaves
1 cup matchstick carrots
1 cup rough chopped cilantro
1/4 cup chopped roasted unsalted peanuts (or cashews)
Combine the soy sauce, honey, ginger, chile-garlic sauce and water in a bowl and whisk to combine. Assemble wraps by evenly spooning chicken, sauce, carrots and cilantro in a lettuce leave. Top with chopped peanuts. Serve with lime wedges.
